Albondigas Meatball Soup

Albondigas Soup is a traditional Mexican meatball soup (fun fact: albondigas means meatball in Spanish!) and it’s one of my favorite comfort foods of all time. This soup is best topped as if it were a Baja-style salad or taco – my favorite toppings are Greek yogurt, angel hair cabbage, salsa, cilantro, and a lime wedge. Maybe even some crumbled tortilla chips, or even pumpkin seeds. Get creative and make it your own!

Meatball Ingredients

1 lb. ground turkey, chicken, or beef

½ lb. all-natural turkey bacon, finely chopped

1 cup cooked short-grain brown rice

1 medium juiced sweet onion, hand-grated (use the pulp only)

egg

½ tsp. granulated garlic

1 tsp. ground cumin

1 tsp. smoked paprika

1 handful cilantro leaves, finely chopped

Soup Ingredients

¼ cup extra virgin olive oil

½ cup sweet onion, finely diced

3 cloves garlic, finely chopped

3 celery stalks, small diced

2 carrots, small diced

1 cup zucchini, small diced

6 cups organic, low-sodium chicken or veggie broth

1 15 oz. can Muir Glen Fire Roasted Tomatoes

2 cups water

1 tbsp. chili powder

1 tbsp. ground cumin

1 handful cilantro leaves, chopped

2 tbsp. fresh oregano, finely chopped (or 1 tsp. dry oregano)

Dash of kosher salt

Step by Step Instructions

Step 1

In your stand mixer with the paddle attachment, mix all meatball ingredients on stir-low-speed until uniformly combined. Then increase speed to medium for about 5 seconds until a firm texture is formed.

Step 2

Using wet hands, form 1½ to 2 inch balls out of the mixture (24+ tiny meatballs). Place on a tray and chill until ready to drop in the soup.

Step 3

In a large soup pot over medium heat, add olive oil, onions, garlic, celery, carrots, and a dash or two of kosher salt. Sauté while stirring for about 5 minutes, until soft and fragrant.

Step 4

Add your stock, tomatoes, water, spices, herbs, and a little salt and pepper to taste. Bring to a low rolling simmer and cook covered for about 10 minutes.

Step 5

Add zucchini and stir. 

Step 6

Drop in your meatballs. Do not stir. Cover and continue to simmer another 20 minutes.

Step 7

Stir and serve as desired.
