Bowl of Soul

This recipe was almost a daily dish I prepared while cooking for a pretty big deal rock band. I called it my “Bowl of Soul”. Why, you ask? Because I felt like we needed some soul-inspired food at that time to lift people UP and nourish the crew! Packed full of fresh nutrients and antioxidants, this dish leaves you super satisfied and leaves you with a little spice to power through your day.


2 cups organic, short-grain brown rice 

2 cups BPA-free adzuki beans, rinsed and drained

2 large bunches dino kale, cleaned, shredded

4 slices nitrate-free naturally smoked thick bacon

2 tbsp. minced garlic

2 tbsp. dry Herbs de Provence

2 tsp. fresh oregano

1 tbsp. fresh rosemary

1 tbsp. fresh thyme

½ tsp. sea salt

1 tsp. cracked black pepper

½ tsp. celery salt

4 tbsp. red wine vinegar

4 tbsp. dijon mustard

Tobasco to taste

Step by Step Instructions

Step 1

Prepare ingredients as suggested above. Steam rice.

Step 2

In a large saute pan or wok on medium heat, cook bacon, covered, stirring occasionally for about 10 minutes, or until fully cooked. Lower temperature and add garlic, herbs, sea salt, celery salt, and pepper. Continue to cook over medium-low heat until fragrant for about 2 minutes.

Step 3

Add vinegar, dijon, and Tabasco to taste. Stir. Remove from heat.

Step 4

Add rice, beans, and greens. Gently fold all ingredients together uniformly. Bowl may be a little sticky – that’s ok!


This can be a complete meal for vegetarians or used as a side dish by omitting the bacon. Serve as desired. Can also be served chilled.
