Dijon Herbal Vinaigrette
Of all the Dijon vinaigrettes I’ve made, this one is by far my favorite.
The difference maker in this recipe, I believe, is the acidity brought on by the champagne vinegar. That paired with lemon juice, herbs, and garlic makes for a fresh, delicious tasting vinaigrette.
This dressing can be used in other salads, as a marinade or dipping sauce. So feel free to get inspired!

Ingredients
2 tbsp. Dijon mustard
1 tbsp. champagne vinegar
1 tbsp. lemon juice
1 to 2 cloves garlic, minced
1/2 cup extra-virgin olive oil
1/4 cup mixed herbs (rosemary, chive, tarragon, thyme), finely chopped
Salt and pepper to taste

Step by Step Instructions
Step 1
Prepare ingredients as suggested above.
Step 2
In your mixing bowl, whisk the mustard, vinegar, lemon juice, and garlic together. Gradually add in oil and continue whisking until uniformly combined and emulsified.
Step 3
Add the herbs and salt and pepper to taste.
Step 4
Dress your salad, or marinate your favorite fish. Serve immediately.
Note:
Store in airtight container (preferably glass) for up to 5 days. Bring to room temperature before serving.
