Warm Hearts Hummus Pizza

This recipe was originally developed by the owner + operators of my gone but not forgotten, Boise, Natural Foods Restaurant – The Kulture Klatsch. It was way ahead of its time and served a community of energy people who loved real food, arts and entertainment. If I could do it all over again, I would do it with kindness and joy – and be fearless!

This is a very popular lunchbox recipe I’ve been making for years which can also be prepared like a quesadilla by stuffing all ingredients into six tortillas, mixing the feta in the hummus before assembly, folding and grilling.

Chow, baby.

Ingredients

4 Ezekiel 4:9 Sprouted Grain Tortilla’s

1 container, store bought (or make mine if you like. This will increase the time of recipes prep and completion)

1 can artichoke hearts, quartered (drained)

1 – 5 oz. bag baby spinach leaves, shredded

1 cup, small diced tomatoes

6 tbsp. red onion, small diced

1 – 7 oz. block of organic feta cheese (crumbled)

Cast iron pan or griddle (for heating and crisping tortillas)

Clean spray oil

2 large cookie/baking sheet

Happy Hummus Recipe:

1 can organic garbanzo beans (BPA-free canned, drained and rinsed)

¼ cup tahini

¼ cup purified water or organic veggie broth

Handful cilantro leaves

2 garlic cloves

½ tsp. cumin

2 tbsp. lemon juice

1 tbsp. tamari

Step by Step Instructions

Step 1

Preheat oven to 425°F. Prepare ingredients as suggested above.

Step 2

Make Hummus: Pulse hummus ingredients in a food processor until smooth. Add more water to hummus if need be. Should be smooth and on the thick side. Set aside.

Step 3

Make Pizzas: Preheat your griddle, cast iron pan, or heavy-bottomed pan over medium-high heat. Spray griddle, heat and crisp the tortillas on both sides.

Step 4

Transfer tortillas to the sheet pans. Dollop and divide hummus among each tortilla and spread evenly. Divide the remaining ingredients among the tortillas (cheese on top) and place in the oven for 10 minutes.

Step 5

Remove from oven, slice and eat!
